Ingredients
For the Meringue
- 1 egg white (from a large egg)
- 1/4 tsp egg white
- 1/3 cup sugar
- 1/2 tsp vanilla extract
For the French Toast
- 1 egg yolk (you can add in more eggs if you want a thicker batter for the french toast)
- 1/2 cup milk
- 1/2 tsp cinnamon
- Butter
- 2/3 slices of stale sourdough
For the Strawberry Sauce
- 8-10 Strawberries
- 2 tbsp caster sugar
- 1 tsp lime juice
For the Garnish
- 2-3 tbsp whipped cream or yoghurt
- fresh strawberries
Recipe
For the meringue
- Preheat the oven to 180 degrees C and line a mini baking sheet with parchment paper or a silicone liner. Set aside.
- Beat egg white until foamy, then add vinegar and beat until fluffy.
- Add sugar very slowly, about 1 tablespoon at a time while still beating.
- Add the vanilla extract and continue beating until the meringue is shiny.
- Spoon out the meringues onto your baking sheet and place in the preheated oven.
- Turn the oven off & leave them undisturbed in the oven for 2 hours.
- OR you could lower the temperature to 120 degrees and bake for 12-15 mins or until done.
For the sauce
- Add the chopped and halved strawberries to a saucepan on medium heat with the sugar and the lime juice. Bring the mix to a boil, stirring occassionally.
For the French Toast
- Mix the egg(s), milk, cinnamon in a shallow bowl.
- Dip the bread slices in this mix for 10-15 sec, or till some of the mix is absorbed into the bread
- Melt butter in a skillet on medium heat and add in the bread slices.
- Cook till golden on each side.
Bringing it all together
- Place the french toast on a plate.
- Top with the yoghurt or whipped cream.
- Add in the fresh strawberries.
- Drizzle over the strawberry sauce.
- Crush the meringues and sprinkle over.
- BONUS: Make fresh strawberry milk with any remaining strawberry sauce! You need about 2/3 tbsp of the sauce per cup of milk.
